Estes is your best option. The east side of the park is far more scenic than the west side, so don’t spend your time in Grand Lake please. If you want to drive all the way to the west side as a day trip utilizing Trail Ridge Road, go for it, just don’t use Grand Lake as your base.

Colorado Springs is, IMHO, boring and conservative. Boulder is a more ritzy, exciting town (it also costs more.) I would assume a bakery would do better in Boulder because of the bigger university and wealthier clientele.
The downtown area is generally pretty safe , even at night. There are folks walking around, having coffee, and enjoying the evenings. Colorado Springs is a city of 375,000 people but for a such with that population is has a low crime rate.
